What are fisheries?

They appear in our estuarine landscapes… at the mouths of the Loire and Charente rivers… fisheries are small wooden huts on stilts, with a square net of a few square meters stretched over a flat frame and lowered horizontally by means of a winch from a pontoon that juts out into the sea. After waiting a few minutes to dissipate the disturbance caused by the lowering, the net is hauled up fairly quickly, trapping any fish between it and the surface, and a bait can be placed in its center. The main fish caught here are aiguillette, eel, sea bass, chainchard, shrimp, whiting, hake, conger eel and mullet.
